Where can I change the long text label "This product will be released on" in product- or wishlists?

Please go to Settings-Shop-Snippets and find "general.deliveryShipping" or "wishlist.deliveryShipping". Click on one of these and change the label text for all languages you desire to change.

I am not shown any information about the time of publication of the product in the product lists, what could be the reason for this?

Please check that you have set the delivery period in the product concerned and that the field is not empty.

How can I set the delivery time window to match the release date?

Create a new delivery time type in the shop settings under delivery times. For example, name it "Pre-order", select "Day" as the unit and set Minimum to "0" and Maximum to "2" (for example). Now go to the relevant product and select "Pre-order" as the delivery time type and save. The correct delivery time window is now displayed in the shop.
